Carrot Cake Mini-Muffins


Carrot Cake Mini-Muffins

1 box carrot cake mix
1 cup water
2 eggs
1/2 cup applesauce
1/2 cup raisins
1/2 cup chopped walnuts

Preheat oven to 400.

Combine cake mix, water, eggs and applesauce. Stir in walnuts and raisins. Spoon into mini muffin tins and bake 11-13 minutes until lightly browned. Makes about 40 muffins.
